Big Gay Ice Cream

I couldn’t be more excited when my friend Anh-Linh sent me this link for the Big Gay Ice Cream Truck around lunch time. Twitter informed us the truck will be parked at Union Square shortly, people responded quickly and we marched in a small cluster to the location where we found the truck with a sign at the servicing window that said “be back at 2:45pm”. Before we even realized a line started to form in milliseconds and we were lucky enough to head it. The “Salty Pimp” instantly sold me, as Vanilla ice cream, Dulce de Leche and Sea Salt are one of my favorite sensations. Palms sweaty, I was waiting patiently in anticipation of my high impact lunch. Finally I was handed a massive – albeit bent – ice cream softy dipped in milk chocolate. Once everyone was served, we marched back – me with an aching stomach… happy Friday!

Summer is in full force and a fresh salad can refuel your body with essential vitamins, and its high water content helps keeps you hydrated throughout the day.

I like picking up locally grown produce from my neighborhood market. This time I went for the juicy, yellow cocktail tomatoes that are less acidic, lemons, green olives marinated in garlic and vinegar, and chives. I also bought some freshly baked, whole wheat country bread.

Slice it up, mix it together, and you’re ready to go – even if you’re usually frequenting the microwave isle. Not to mention well worth it.
